1 kg Quince, washed and cut in 1/4
700 g Sugar
1 Cover quinces with water and boil for 45 minutes or untl very soft.
2 Drain, and save the water. Cut hard part out of quinces.
3 Use some of the water and liquidize until a very fine pulp.
4 Push pulp through a seive.
5 Add pulp and sugar back into pot and let boil, while stirring for about an hour, or until thick and golden colour.
6 Let set in prepared pan. Cut into blocks and roll in Castor Sugar.
