Bacon and honey crumpets

(Makes 24)

Ingredients

200 ml cooked white beans

200 ml self-raising flour

60 ml castor sugar

15 ml honey

1 egg, beaten

200 ml milk

Method

1.Mash the beans or process them in a food processor

2.Sieve the dry ingredients together.

3.Mix the honey and egg

4.Make a hollow in the flour mixture and pour the honey and egg mixture and some of the milk into it.

5.Add the rest of the milk gradually. Mix well.

6.Add the bean puree. Mix until smooth

7.Oil a frying pan and heat.

8.Arrange spoonfuls of the mixture in the frying pan and bake on both sides until golden brown

9.Serve the crumpets with syrup and jam.

HONEY-GLAZED BAKED BACON

Yield: 12 pieces bacon

Ingredients

12 slices streaky bacon

±30ml honey

2ml chopper chilies (optional)

Instructions

1. Preheat your oven to 200°C. Cover your baking sheet in foil or parchment paper and place wire

rack on top.

2. Lay the bacon on the wire rack, making sure to spread the strips out.

3. Heat the honey until it is runny. Drizzle honey onto the strips of bacon.

4. Place in the middle of the oven for about 12 to 15 minutes. Around the 10

minute mark, start to regularly keep an eye on the bacon to see if it has cooked

enough (this will depend on the thickness of your bacon).
