White Beans and Carrot Samosa



500 ml cooked brown beans

2 medium onions, chopped

15 ml oil

4 carrots cut into thin strips

3 ml salt

5 ml ginger

2 cloves of garlic, crushed

3 ml turmeric

10 ml coriander

25 ml spring onions, chopped

5 ml cumin seeds

5 ml curry powder

2 ml sugar

1 tomato, diced

45 ml Fresh Coriander

30 ml Sriracha Sauce

Samosa Purr Dough

Oil, for deep-frying


25 ml flour

25 ml water

  1. Saute the onion in the oil until transparent.

  2. add the spices and tomato and cook for one minute

  3. add the beans, stirring and allow to simmer over a low heat remove from the heat and allow to cookPaste

  4. Paste:

  5. Mix the flour and water to make a paste. Fill each strip of pastry with 2 teaspoons of bean filling

  6. Fold the pastry into form a triangular samoosa. Seal the end with the paste

  7. Deep-fry until golden brown.
