Ingredients
250 ml Cake flour
1.25ml Oryx Salt
1.25ml Baking Powder
310ml (120g) Cheddar cheese, grated
125ml (120g) butter, room temperature
Method
Preheat the oven to 200˚C, spray 2 muffin pans with spray and cook
Add flour, salt and baking powder into a mixer
Add cheese and butter and mix until a manageable dough. Form small balls of 7.5ml each. Place in the holes of the muffin pans. In the centre of the ball make a hole in the dough with a 2.5ml measuring spoon.
Add apricot jam in the centre of each. Bake for 15 minutes until golden brown and cooked.
