Ingredients
4 chicken breasts
4 slices smoked ham
4 slices processed cheese
salt and pepper
50mL four
100 – 150ml fresh breadcrumbs
egg wash (±2 eggs)
oil and butter for shallow frying
Method
Cut chicken into a butterfly shape
Place individual breasts between sheets of cling wrap and beat lightly
Season. Place ham and cheese on the chicken and fold over.
Beat the edges together so that they’ll stick
Breading: first dust the filled breasts with flour, then dip it in the egg-wash and the coat it with the breadcrumbs
Place breasts on a plate, cover and leave to rest for at least 20 minutes in a fridge.
Heat oil in a frying pan. Fry the breasts until cooked and golden brown
Place in oven at 180̊C for 20min
Plate and serve.
