Chicken pot pie


1 carrot finely chopped

1/2 onion finely chopped

1 celery stick finely chopped

10ml olive oil or butter

2 chicken breast (pre cooked)

1 sprig of thyme

1 tablespoon flour

125ml chicken stock

Puff pastry

Salt and pepper


1. Heat the oven to 180 degrees Celsius.

2. Fry the onions, carrots and celery in olive for 3 to 5 minutes.

3. Add the flour and cook for at least 2 minutes.

4. Add the chicken stock and let the mixture slowly cook until it forms a thick sauce. Cream can be used as a substitute. Add the thyme or herbs of your choice to the mixture.

5. Add the cooked chicken breast. (Chicken can be browned for color).

6. Place the creamy chicken mixture in an oven proof dish.

7. Cut puff pastry into blocks and shapes according to your preference. Place the puff on top of the chicken mixture.

8. Place in the oven for 8 to 12 minutes until golden brown.


* Any selection of vegetables can be used according to your preference

* Cream can be used as substitute for creamy sauce

* Any protein (meat) can be used
