Milk Tart Dutch Poffertjies

Ingredients
Poffertjie Batter
285ml Flour
5ml Baking powder
2ml Salt
15ml Sugar
1 egg
190ml milk
5ml Vanilla Extract
Butter for greasing
Milk tart filling
250ml Milk
30ml Sugar
25ml Corn Starch
1 Egg yolk
5ml Vanilla Extract
Cinnamon for dusting
Method:
1. Whisk together the poffertjes batter ingredients until smooth.
2. Lightly grease a poffertjes pan or non-stick skillet with butter.
3. Heat the pan over medium heat.
4. Pour small amounts of batter into each well of the pan.
5. Cook for 2-3 minutes per side, or until golden brown and cooked through.
6. While the poffertjes are cooking, prepare the filling: whisk together the milk, sugar, cornflour, egg yolk and vanilla in a small saucepan.
7. Cook over medium heat, stirring constantly, until the mixture thickens.
8. Once the poffertjes are cooked, fill each one with the milk tart filling and dust with cinnamon or Icing sugar
