Mini Muffin Tray Baklava

Ingredients
20 sheets phyllo
250ml chopped nuts
100g melted butter
Simple Syrup
250ml sugar
250 ml water
2 slices of lemon
Method
1. Spread the chopped nuts evenly over the phyllo pastry.
2. Roll the pastry into a long roll.
3. Cut the pastry into small pieces.
4. Pour over butter
5. Bake at 180̊ C until golden brown
6. Pour simple syrup over the baklava once removed from the oven.
7. Sprinkle chopped nuts over the bites for extra flavour
Simple Syrup
1. Mix water and sugar in a small pot
2. Add slice of lemon for extra flavour and bring to the boil.
