The Amazing Chocolate Cake

1 x 20 cm

Ingredients

375 ml flour

375 ml granulated sugar

180 ml cocoa powder

7 ml baking soda

5 ml baking powder

2 ml salt

2 large eggs

180 ml buttermilk

180 ml warm water

60 ml vegetable oil

5 ml vanilla essence

Method

1. Preheat oven to 180°C.Line three 20cm cake rounds with baking paper.

2. Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined.

3. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes.

4. Divide batter among the three pans.

5. Bake for 20-30 minutes until a toothpick inserted into the center comes out clean.

6. Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely.

7. Frost with your favorite frosting and enjoy!


CHOCOLATE CREAM CHEESE BUTTERCREAM FROSTING

180 g butter softened

125 g cream cheese softened

180 ml cocoa powder

5 ml vanilla essence

750 ml Icing sugar

30 ml milk as needed

Method

1. In a large bowl, beat together butter and cream cheese until fluffy. Use a hand mixer or stand mixer for best results

2. Add in cocoa powder and vanilla. Beat until combined.

3. Beat in icing sugar, 1 cup at a time. Add milk as necessary to make a spreadable consistency. The frosting should be very thick and will thicken even more if refrigerated.
