+- 150g Strong Cheddar cheese
30ml Rosemary, chopped
30ml Parsley, chopped
Salt and Pepper
1,5kg Silverside/ Topside Roast
400g Streaky Bacon
1 Onion, chopped
2 Medium Carrots, chopped
2 Celery sticks, chopped
375ml Beef stock
Preheat oven to 180°C
Cut cheddar into long batons
Mix herbs, salt and pepper together. Roll each cheese stick in herb mixture.
Make deep incisions against the grain of the beef roast and press cheese into the incision.
Season meat with salt and pepper. Bard bacon over meat.
Add chopped onions, carrots, celery and stock to oven dish. Place roast on top. Pour beef stock over vegetables.
Bake for 40-80 minutes minutes or until beef is done according to liking.
Place cooked vegetables and beef juices into food processor and blend until smooth.
Pour into saucepan and reduce to make sauce thicker
