Ingredients
350g Cake flour (625 ml)
2ml Salt
50ml Castor sugar
10g Anchor Instant Dry yeast
60g Margarine (or 50ml oil)
50ml Luke warm milk
1 Large egg, beaten
100ml Lukewarm water
Filling
100g Baking chocolate, grated
10ml Orange rind
25g Butter
40g Almonds (70ml), chopped
Method
1. Mix flour, salt and sugar and add the yeast. Rub the margarine into the flour mixture.
2. Add the egg and enough lukewarm water to form a soft dough. Knead dough well until smooth and elastic. Leave to rise.
3. Knock down. Roll into a 25cm x 30cm rectangle. Rub the orange rind over the dough and sprinkle the chocolate and almonds evenly over the dough.
4. Roll the dough up into a roll, starting from the wide side. Cut the roll in half, lengthwise (but not all the way through at the top, so that the 2 halves are still attached), using a sharp knife. Turn each half cut upside up. Carefully twist the halves together, keeping the cut side up, to expose the filling. Pinch ends well together.
5. Place in a greased baking sheet and allow to rise until double in volume.
6. Bake in a preheated oven at 180⁰C for 10 minutes, reduce heat to 160⁰C and bake for further 20 minutes.
