Gingerbread Brownies

Gingerbread Brownies

(makes 18 cmx18cm tray)


114g butter

150g brown sugar

1 egg

15ml golden syrup

2.5ml vanilla

157g Flour

2.5ml ground ginger

5 ml cinnamon

2.5ml baking powder

1ml salt

80g White chocolate

Icing sugar for dusting


1. Preheat oven to 160C, line a 18 cm x 18 cm baking dish with parchment paper.

2. Melt butter and brown sugar.

3. Mix in eggs, syrup, and vanilla.

4. In medium bowl, mix all dry ingredients (flour, ginger, cinnamon, baking powder and salt)

5. Gradually stir in in the flour mixture into the butter and egg mixture until completely combined, add half of the chocolate.

6. Spread batter evenly into prepared pan. Sprinkle last bit white chocolate chips over.

7. Bake for 20-25min till centre is no longer jiggly.

8. Allow to cool and cut, sprinkle with confectioners’ sugar, and serve.
