Ingredients
125ml Quick instant oats
187m Flour
125 ml Brown sugar
0.6 ml Baking powder
0.6 ml Baking soda
85g Butter (melted)
Lemon filling:
195ml Condensed milk
1 egg yolk
63ml Lemon juice
5ml Lemon zest
0.5ml Salt
Oat crust:
1.Pre heat oven to 180C . Combine oats, flour, brown sugar, baking soda, baking powder. Pour
melted butter over mixture, mix till crumbly.
2.Mesure out ½ of mixture and set aside to reserve for topping.
3.Pour remaining mixture into lined baking dish. Press firmly to the bottom of the pan.
4.Bake 15 minutes or golden brown. Set aside to cool slightly while you make the lemon filling.
Lemon filling:
In a bowl, add condensed milk, egg yolk, lemon juice, lemon zest and salt. Mix until smooth and
creamy.
Assembly:
1. Spread lemon mixture over baked oat mixture.
2. crumble reserved oat mixture over the top.
3.Bake 20 min or until edges are golden brown.
4.Cool down till room temperature and refrigerate 1 hour before serving.
Cut into desired size and enjoy!
