Ingredients: 330g Potatoes for mash 30 ml Rice flour 15 ml Corn starch Salt and pepper Chili flakes 30 ml Chopped fresh herbs (Basil, Parsley, rosemary, Thyme) 30 ml finely grated Parmesan Cheese Oil for deep fry Method:
1. Peel Potatoes and cut into ¼. Place in water and boil, until just soft.
2. Once potatoes are soft, drain and mash while still hot.
3. Add flours, spices, herbs and cheese.
4. Using your hands, mix until a dough form. You can add a little water if it is too dry.
5. Roll balls, about the size of a R5 and press flatter with a fork.
6. Heat oil and deep-fry, until golden brown.
Serve Hot
Tomato sauce 1 Onion, chopped 1 x can tomato and onion mix Fresh basil salt and Pepper 1. Heat a little oi, fry onion until soft.
2. Add tomato mix and boil until thickened.
3.Add Basil and blend with a stick blender until smooth. Season with Salt and pepper.
